NUTRITIONAL ANALYSIS"
Week I of the cycle menu was analyzed for nutritional adequacy using the Nutritionist V software. The RDA for a target population of
men, 19 - 24 years old was selected. Five days were analyzed using the software. The entire week was evaluated against Title 15
requirements. The results are as follows:
The average calories (2310 kcal) supplied did not meet the nutritional goal. Using 2900 kcal as the target level, the menu only
supplied 80 % of the required amount This is a slight increase over the total calories noted in last year's evaluation. Jail
personnel report however; that inmates have the opportunity to ask for second servings on occasion. There is a fav amount of
inmates who are on work furlough off site during meal service making extra servings available. Inmates can also purchase snack
items from a vending machine on site. The availability of these additional food items contributes extra calories, but are not
accounted for in the menu evaluation.
Although the use of high fat foods in the menus has somewhat decreased, the fat content still exceeds the 30% recommendation.
Analysis showed that the fat content increased to 39%, up from 34% last year. This is due in part to the inclusion of the required 2
or more milk servings/day. The vendor (Catering Systems, Inc.) reported that whole milk is used.
The minimum requirement of six servings from the grain group was not mel on four days. During the three days when the
required six servings were provided, the requirement of having three of these servings in the form of whole grain or whole or
partial whole grain was not met.
A specific Vitamin A source fruit or vegetable is not written as offered daily on the menu. Although fresh fruit is indicated, it is
difficult to determine whether it is a Vitamin A source.

• Increase the total servings of the grain group to reach the daily requirement of at least 6 servings a day. Make sure that three of the

Overall, the menus were fairly well varied, although there were some repeats of the meals throughout the 6 -week cycle. The other
nutrient levels such as the B vitamins, folate, magnesium, selenium, etc. met or exceeded the goals of the RDA for the targeted age
group selected.

Summary of medical/mental health evaluation:
The medical policy and procedures manual has improved significantly since the 1999 inspection. The manual has been
updated to meet many of the requirements of Title 15. In order to ensure further compliance with the Title 15 regulations,
the following recommendations were made:
I. Keep a copy of the physician's approval statement with the policy and procedures manual at all times.
2. Obtain an English version of section 1800.16, regarding Sick Call for inmates, which is currently available
only in Spanish.
3. Maintain a copy of current licensure for all employed Registered Nurses.
4. Do not accept and dispense expired medication.
5. Dispose all expired medications, solutions, ointments, etc., in accordance to protocol, which should be
created.
